When the weather gets chilly, there is nothing more comforting than a steaming bowl of lentil soup. This recipe is a true “one-pot wonder,” packed with nutrient-dense kale, earthy green lentils, and fire-roasted tomatoes for a subtle smoky depth.
What makes this version a winner is the layering of flavors. By sautéing the kale stems along with the mirepoix (onions, carrots, and celery), you ensure nothing goes to waste while adding great texture. It’s vibrant, fiber-rich, and incredibly budget-friendly.
Pro Tip: To keep this 100% vegan, swap the optional Parmesan garnish for a sprinkle of nutritional yeast or some toasted breadcrumbs for that salty, savory crunch!
