Baked Tomatoes

Authentic Assyrian Recipes from Nadia’s Family Cookbook

Ingredients:

  • 3 large ripe tomatoes, halved
  • 2 Tbsp onion, finely chopped
  • 2 Tbsp parsley, finely chopped
  • 1 Tbsp Margarine
  • 3/4 Cup cooked spinach, chopped
  • 2 Tbsp Italian seasoned breadcrumbs
  • Salt, Pepper & Paprika to taste

Preheat oven to 375°. Place tomatoes, cut side up, in an oiled baking dish. Combine onion, parsley, margarine, spinach, salt, pepper and paprika and spread evenly over tomatoes. Top with crumbs and bake for fifteen minutes.
